Not-So-Junior Mints


Not-So-Junior Junior Mints. In other words, Junior Mints that matured into “Senior Mints” and will soon be graduating with a Bachelor’s of Science Degree in Delish-ology. #NerdAlert! Thanks for the recipe Sofia (a.k.a. @joy__of__yoga). 


Ingredients:

3/4 cups nuts (I used a mix of Brazil and Macadamia)
3/4 cup shredded coconut
Shake of salt (I used pink Himalayan)
1 tbsp of honey or coconut nectar
1/4 tsp natural peppermint extract
1/2 cup vegan chocolate chips
2-3 Chocolate Coated Mint Squarebars


Recipe: 

  1. Blend the nuts, coconut, and salt at very high speed until combined into 'paste' type consistency. Scrape down the bowl a few times if required.
  2. Next, add in the honey/coconut nectar & peppermint extract. Mix into mixture.
  3. Scoop the mixture onto Chocolate Coated Mint Squarebars. (Tip: pop these into freezer or fridge for a few minutes while tempering chocolate.)
  4. Microwave your chocolate chips briefly to temper (20-30 seconds in a glass bowl or cup and then check, depending on your microwave strength it may need a little longer). Stir into a nice glossy liquid and pour over the cold mixture-topped Squarebars. Cool for at least half an hour... And voila! Cut into gorgeous triangles and enjoy on date night.
