Great balls of protein! Try these quick and easy mint chocolate chip protein truffles "dusted" with Squarebar crumbles! Creation courtesy of Kim from thecoconutdiaries.net!
Ingredients (makes 7 truffles):
3 TBSP coconut flour
1 TBSP almond meal/flour (or more coconut flour)
1 TBSP coconut oil
1 scoop mint chocolate chip whey protein (Cellucor brand)
1 stevia packet
3-4 TBSP unsweetened almond milk
Mix all ingredients (except for the Squarebar) until thick and even. You add the almond milk last, slowly, using as little as possible to fully incorporate. Place the batter in the fridge for 15 minutes to thicken. Then remove and roll into 7 balls.
Crush up 1 Cocoa Crunch Squarebar into small bits onto a plate. Then roll your truffle balls in the bits until fully coated. If you place the truffles in the fridge another 15 mins, they thicken perfectly. But I’m impatient and can never bring myself to wait.
