Squarebar Stuffed Peanut Butter Protein Cake Bites?! Could you pack more good things into that title?! This creation takes the cake (pun intended)! Kudos to our friend Nicolette (aka @njstramfam, aaka Protein Treats By Nicolette) for dreaming this one up!
Ingredients (Makes 12 servings):
2 egg whites
2 Tbsp coconut oil (warmed to liquid)
1/4 Cup unsweetened almond milk
1/4 cup gluten-free oat flour
1/2 cup almond meal flour
1/4 scoop vanilla protein powder
1/2 cup peanut powder
1/4 cup xylitol
1/2 tsp baking powder
Pre-heat oven to 350 degrees F. Line a small, square baking dish with parchment paper (I used a 5x8in dish). Next, combine egg whites, coconut oil, unsweetened almond milk, gluten-free oat flour, almond meal flour, vanilla protein powder, peanut powder, xylitol, & baking powder in a bowl. Stir until well combined. Cut two Squarebars into 8 equal pieces. Pour ½ of the "blondie batter" into baking pan. Layer the 8 Squarebar pieces on top of the blondie batter then pour the remaining ½ of the batter on top of the Squarebars. Bake in the oven for 32-36 minutes. Let cool then cut into 12 squares. Enjoy!
