Chocolate Chunk Cookie Dough Bars


Calling all cookie dough lovers (you know who you are... the "spoon-lickers" of the family!), this no-bake, vegan recipe is dedicated to YOU! Izzy's (@minimalmeals) Chocolate Chunk Cookie Dough Bars, filled with Squarebar chunks, are basically the bomb dot com. Without the scare of raw eggs, these babies are sure to be a treat for the whole family. Plus, replacing chocolate chunks with Squarebar chunks is kind of becoming the new "it" thing these days (well at least over here in the Square Kitchen)! So, what are you waiting for, get to it! Ingredients:

1 1/2 cups all-purpose flour (*or gluten-free all-purpose flour)
1/2 cup coconut sugar
2 tablespoons coconut oil
1 tablespoon almond butter
3 tablespoons almond milk
1/2 tablespoon vanilla extract
1/2 teaspoon salt
1/2 cup dark chocolate chips
2 Squarebars chopped into chunks


Recipe:

  1. Combine flour, salt and coconut sugar in a bowl.
  2. Melt coconut oil and combine with almond butter, almond milk, and vanilla extract.
  3. Pour wet mixture into the dry mixture and mix (with hands, if necessary) until dough is formed.
  4. Mix in chocolate chips and Squarebar chunks.
  5. Press into tin (or roll out until 1/2" thick) and refrigerate for 3+ hours.
  6. Cut into squares/bars and keep refrigerated.
