Overnight Chia Pudding Parfaits


Chia Pudding Parfaits = #BreakfastGoals! Chia Pudding Parfaits with Squarebar chunks and other yummy tasties = LIFE! Ladies and gents, feast your eyes on the prize, the delicious, get-in-my-tummy, gluten-free, soy-free, vegan kind of prize! These chia pudding parfaits are sure to brighten up any morning, plus they're super easy to make - prepare the pudding, let it soak over night, and have a parfait par-tay the next morning ... i.e. absolutely no fuss. Great for when you're in a rush, but still want to have something "fancy" & "instagram-worthy" for breakfast. Thanks @blueberrysmoothies for this AH-MAZING creation, well more like creations! ;)

Ingredients:
makes 3-4 servings

For plain chia pudding:
2 cups plant-based yogurt
1/3 - 1 cup (to taste) dairy-free milk (depending on your preferred consistency)
5 tbsp organic chia seeds

For chocolate pudding:
mix-in: raw cacao powder, vanilla, and coconut sugar.
toppings: banana, 1 Chocolate Coated Crunch Squarebar

For blue pudding:
mix-in: spirulina powder
toppings: cut up apple, puffed quinoa, (our additional suggestion: 1 Chocolate Coated Coconut Squarebar)

For pomegranate pudding:
mix-in: vanilla
toppings: pomegranate, (our additional suggestion: 1 Chocolate Coated Cherry Squarebar)


Recipe: 

  1. Add all plain chia pudding ingredients to a mixing bowl and mix! Once combined, let rest in the fridge overnight (or for at least 3 hours). 
  2. The next morning, add your desired mix-ins and toppings (note: cut Squarebars into 9ths - 9 tiny squares)! :) 
  3. Enjoy!
