Some may think there’s nothing better than a classic blondie. But, what about a peanut butter blondie? Better yet, what about a peanut butter chocolate Squarebar chunk blondie? We rest our case. Thanks Kim (a.k.a. @pbeechie), you’re kind of a vegan, gluten-free baking mastermind.
Makes 12 blondies
1 1/2 cups rolled oats
1/4 cup almond meal/flour
1 TBSP ground flax
1/4 cup baking stevia
2 tsp baking powder
3/4 cup unsweetened almond milk
1/4 cup unsweetened applesauce
1/2 cup crunchy peanut butter
- Grind the oats into a flour. Then in a medium bowl, mix the ground oats and the remaining ingredients (except for the Squarebar); mix very well until even.
- Chop up the Squarebar into small pieces, and fold into the batter.
- Spray a 9×9 baking dish with nonstick spray and pour your batter in. Bake at 350 F for 22 - 25 mins.
- Let cool for 10 minutes then cut into 12 pieces. Enjoy!
