Chocolate-Berry, Oh-So-Cherry Parfait Cake

We’re calling this the Chocolate-Berry, Oh-So-Cherry Parfait Cake! Take a gander at these layers: raw cacao brownie, raspberry chia jam, Chocolate Coated Cherry Squarebar Cake (right in the middle), and coconut yogurt “frosting.” So good, even your pickiest eater will be intrigued. First Layer: Brownie
½ cup oats
¼ cup almonds
½ cup of dates (soaked in warm water for 5 minutes)
2 tbsp cacao
1 tablespoon melted coconut oil

Second Layer: Raspberry Chia Jam
1 cup raspberries
1 tbsp chia seeds
1 tbsp coconut milk

Third Layer: Squarebar Cake
1 Chocolate Coated Cherry Squarebar (chopped into cubes)
1 cup dried cherries (soaked in warm water for 5 minutes)

Coconut Yogurt "Frosting" Layer:
really simple... just 1 cup of plain or vanilla coconut yogurt
feel free to add into an organic superfood berry powder

Topped with:
Frozen Blueberries
Frozen Blackberries
Fresh Raspberries


  1. Add all brownie layer ingredients into a food processor. Blend.
  2. The ingredients will start to firm up, and get quite thick. You know it's blended enough when you can pinch the mixture and it holds its shape.
  3. I used a small plate and started to mould the mixture into a smallish square, about 1 inch thick... and I plopped it into the freezer for 30 minutes.
  4. Clean your food processor, then add all the ingredients for the Squarebar cake layer, blend until really sticky (clumpy). Mould into another square and set into the freezer for a few minutes, just till it firms up nicely.
  5. Now prepare jam. Combine all ingredients in a sauce pan and cook on low heat for 5 minutes, stirring often.
  6. Now prepare the "frosting". Literally just mix the yogurt, and the superfood together with a spoon till well combined, and pop it in the fridge just till your about to assemble the cute little work of art!
  7. Remove both the brownie, and Squarebar layer from the freezer. Using a large cookie cutter, cut one round piece off of each and begin assembling.
  8. I started with a layer of brownie, then jam, then square bar, then more jam, cream and topped with more little crumbled up bits of brownie!
  9. Finished it off with fruit, and I dug right in!
