Cashew Vanilla Protein Cookies

Protein-packed, vegan, and only 5-ingredients... that's just the way the cookie crumbles. Thanks Charlotte (a.k.a. @charleyshealth) for this super scrumptious recipe.


2 scoops vegan vanilla protein powder

5 tbsp smooth cashew nut butter

1/4 cup ground almonds

2 tbsp brown rice syrup or coconut nectar

1 Chocolate Coated Almond Spice Square


    1. Preheat your oven to 250 degrees F (170 degrees C) and line a tray with baking paper.
    2. Start by combining the protein powder and ground almonds together in a large mixing bowl.
    3. Add in the cashew butter and brown rice syrup (or coconut nectar) and mix well until everything is well combined. I usually like to use my hands after initially mixing the ingredients with a wooden spoon to insure that they are thoroughly mixed together.
    4. Next, add in the Square chunks and mix again to evenly distribute them. Mold the dough into roughly 6 cookies and place on the lined baking tray.
    5. Bake in the oven for around 12 minutes until slightly golden. Leave to cool completely. Enjoy!
