Chocolate Chip Protein Popcorn Cookies


Protein Popcorn in chocolate chip cookies... can you say, "Gourmet AF!" You've got your two favorite movie snacks (popcorn & chocolate) all rolled 'n doughed into one ooey, gooey, delicious cookie! MIND BLOWN. Thanks Lina (a.k.a. @thathealthjunkie) for this creative & tasty recipe!


Ingredients:

Makes about 16 cookies.

1/2 cup vegan butter - room temp
3/4 cup maple or coconut sugar
1 egg (or flax egg)
1 tsp vanilla
1 1/2 cup almond flour 
1/2 cup oat flour
1 tsp baking soda
1 tbsp ashwaghanda (optional)
4 cups Square Sea Salt Protein Popcorn
1/2 cup chopped dark chocolate (Wanna be super extra? Add in Chocolate Coated Cookie Dough Square chunks!)


Recipe:

  1. Cream together butter and sugar with a whisk on high speed for about 3 mins. Add egg (or flax egg) & vanilla. Mix until combined. 
  2. Combine the flours, baking soda, & ashwaghanda in a separate bowl. Slowly mix into wet mix with a spatula or wooden spoon until fully combined.
  3. Mix in the protein popcorn & chocolate, then leave to chill in the fridge for an hour.
  4. Preheat the oven to 350 F & line 2 baking trays with parchment paper (or use the same tray twice).
  5. Use a small scoop or tablespoon to roll the cookie dough into balls - about 8 per tray.
  6. Bake for about 9-11 mins, or until golden around the edges and soft in the middle. ENJOY!
  7. Sneak some into the movie theater... we dare you!
