Chocolate Chunk Banana Bread Cookies

You read that right, Chocolate Chunk Banana Bread Cookies. Just a couple of my favorite things coming together in delicious harmony! Plus, they're gluten-free, dairy-free, and egg-free! Ashley (a.k.a. @namasteupbeet) you're a genius!


2 flax eggs
4 oz vegan butter
1/2 cup maple syrup
1 tsp vanilla
3 very ripe bananas
1/2 cup almond flour
2 cups oat flour
1 tsp baking soda
Dark chocolate chips
Chopped walnuts
1 Chocolate Coated Peanut Butter Square, finely chopped


  1. Preheat oven to 350F.
  2. In a large bowl, use a hand mixer to blend flax eggs, butter, and maple syrup.
  3. Then add in vanilla and bananas and continue to blend.
  4. Next up, add almond flour, oat flour, and baking soda.
  5. Mix until well combined.
  6. Fold in Square chunks, dark chocolate chips, and chopped walnuts.
  7. Using an ice cream scoop, scoop batter and place on a lined baking sheet.
  8. Bake at 350F for 12-14 mins.
  9. Highly recommend you try one as soon as they come out of the oven, but once they cool, they make the perfect ice cream sammie cookies!
