Chocolate Chunk Coconut Granola

For those of you that need chocolate in your veins first thing in the morning... we have the recipe for you! Chocolate Chunk Coconut Granola, perfect as a smoothie topping, in a bowl with almond milk, or just pouring directly into mouth (our usual method of choice). Thanks Haley (a.k.a. @hungryhaley) for this chocolate bomb of a recipe!


Makes 3 cups.

1 1/4 cup rolled oats (GF if needed)
1 cup brown rice crisps
1/2 cup shredded coconut
1/4 cup coconut oil
1 tbsp cacao powder
3/4 cup peanut butter or chocolate peanut butter
2 Chocolate Coated Coconut Squares, cubed


  1. Preheat oven to 350 F and line a baking pan with parchment paper. 
  2. In a large bowl, combine the oats, crisps, coconut, and cacao powder. Set aside. 
  3. In a separate, smaller bowl, whisk the coconut oil and peanut butter until well-incorporated. Pour into the dry ingredients, add the cubed Squares, and stir to combine. 
  4. Spread mixture onto the baking pan and bake for 20-24 minutes, or until slightly darkened in color and crisped. 
  5. Remove from oven and allow to cool. Serve immediately and store leftovers in an airtight container for up to one month. 
  6. Enjoy!
