Chocolate-Chunked Chocolate Chip Cookie Bar


A recipe that brings peace between two groups of people... You see, you have your *Chocolate Chunk* people and your *Chocolate Chip* people, but this recipe pleases both! We call it the Chocolate-Chunked Chocolate Chip Cookie Bar... it's a mouthful, but surely a delicious one. Thanks Haley (a.k.a. @hungryhaley) for this super scrumptious recipe!


Ingredients:

Makes 12-16 bars
1 1/2 cups whole-wheat flour (or gluten-free flour of choice)
1/2 tsp baking soda
3/4 tsp baking powder
1 tsp sea salt, plus extra for sprinkling
1/2 cup vegan butter, room temperature (not melted), plus extra for greasing
1/3 cup organic brown sugar*
1/3 cup organic cane sugar*
-->*if you prefer, you can replace both sugars with 2/3 cup of coconut sugar, I used brown & cane to make the bars "fluffier"
1/4 cup nut butter of choice
1 egg or flax egg
1 tsp vanilla extract
1/2 cup Chocolate Coated Square chunks, of choice, I recommend Peanut Butteror Cookie Dough
1/3 cup chopped nuts
Chocolate chips, for garnish

Recipe:

  1. Preheat the oven to 350F. Grease an 8x8 baking pan with butter (or oil). 
  2. In a large mixing bowl, cream together the butter & sugar using a hand- or stand-mixer on high until smooth and fluffy. Add in the egg (or flax egg), nut butter & vanilla - one at a time - & beat again until incorporated. Set aside. 
  3. Combine the dry ingredients in a small bowl and stir. Slowly scoop spoonfuls of the dry ingredient mixture into the large bowl of butter-sugar-egg mixture. Keep the mixing speed on low to prevent flour from flying everywhere. Mix until just combined & gently fold in the chocolate bar chunks & nuts. 
  4. Transfer the batter into the greased baking pan & lightly press it to evenly spread throughout the pan. Sprinkle with chocolate chips and bake for 20-22 minutes, or until golden brown & a toothpick comes out clean. 
  5. Cool before slicing. Store in an airtight container at room temperature or in the fridge. 
  6. Enjoy!
