Chocolate PB Date Bars

Chocolate + Peanut Butter + Dates = Our kind of afternoon delight! These simple ingredient, gluten-free, and dairy-free dessert bars are just what the *doctor* (if your doctor was trying to help you live your best life) ordered! Thanks Laura (a.k.a. @lauralivinglovely) for such a delicious recipe!


Toasted Coconut Crispys
3 tbsp peanut butter
1 tsp almond milk

1 cup medjool dates (pits removed)
1/2 cup peanut butter
1 tbsp almond milk
Sea salt

1 tsp coconut oil 
dark chocolate bar


  1. Line a 9x5” bread tin with parchment paper.
  2. Combine base ingredients in a food processor and pulse until combined. Using hands, press dough into a solid layer in the bread tin.
  3. Once base layer is in the tin, add the filling ingredients to the food processor. Blend until a paste forms. Using hands, press the pb + date paste on top of the base layer in the tin.
  4. On stove top, heat to medium/low and melt the coconut oil and chocolate together - stirring to ensure it doesn’t burn. Once melted, pour on top of the paste layer and cover entirely (may need to use a spatula to help spread the chocolate).
  5. Place in the fridge for half an hour. Cut into sections.
