Chocolate PB Icebox Cake

Square Kitchen has teamed up with the Vitamin Shoppe and their plnt® products yet again! This time it's Kim's (a.k.a. @pbeechie) Chocolate PB Icebox Cake; which, in our opinion, is like a protein-packed parfait married an ice cream cake and had a baby... a very delicious baby at that. 

Serves: 4-6 

1 cup water or dairy free yogurt
2 tbsp peanut butter 
1 tbsp melted plnt coconut oil 

Chocolate Coated Peanut Butter Squares


  1. Line a mini loaf pan with saran wrap or parchment paper (for easy removal of the dessert later).
  2. Slice all of your Squares in half to make them thinner in height than they originally are.
  3. Place two halves at the base of the pan. Mix the protein powder, water (or yogurt), and stevia. Spread half of this mixture on top of the Squares in the pan.
  4. Make another layer of Squares on top using two halves. Mix the peanut butter and coconut oil. Pour on top of the Squares in the pan. Place the last two Square halves on top to make a new layer. Spread the final half of the protein powder mixture on top.
  5. Freeze for 1-2 hours. Let thaw 5 minutes, slice, and enjoy! Store any leftovers in the fridge or freezer.
