Chunky Monkey Overnight Oats

I'm usually not a morning person, but these Chunky Monkey Overnight Oats definitely help! Breakfast of champions, for sure! Thanks Ashlyn (a.k.a. @adancersplate) for this delightful recipe. 


1 cup oats
1 cup organic coconut milk
½ tbsp chia seeds
½ cup plain organic almond-milk or coconut-milk yogurt
2 tbsp peanut butter, divided
1 banana, sliced
1 tbsp coconut flakes
1 tbsp dairy-free dark chocolate chips
1 tsp vanilla extract

Chocolate Coated Peanut Butter Squares


  1. Cut your Squares into 8 pieces each.
  2. Mix the oats, milk and chia seeds in a container. Refrigerate overnight.
  3. In the morning, mix in the dairy-free yogurt, half of the peanut butter, vanilla extract, and half of your Square chunks.
  4. In a parfait glass or jar, layer oat mixture with remaining peanut butter, banana, coconut flakes, and chocolate chips. Top with any extra toppings you wish, and the rest of your Square chunks!
