Coconut Chip Banana Bread


If you dress up like a banana but you're eating banana bread, is that called canabananalism? This Coconut Chip Banana Bread is surely one for the banana bread books! Vegan, gluten-free, and delicious, thanks Kim (a.k.a. @pbeechie) this recipe is quite a-peeling!


Ingredients:

3 medium bananas, very ripe and mashed
1 1/2 cups raw oats, ground into a flour
1 cup buckwheat flour
1/4 cup unsweetened shredded coconut
1/2 tbsp baking powder
1/4 cup baking stevia or 1/2 cup coconut sugar (Optional) 
¾ cup unsweetened almond milk
1 Chocolate Coated Coconut Squares
1/2 oz. toasted coconut chips (for topping)

Recipe:

  1. Preheat over to 350 F.
  2. Mash your bananas into a large mixing bowl. Then add the remaining ingredients (except for the Square and coconut chips) and mix evenly. Cut the Square into small pieces, then incorporate it into the batter.

  3. Spray a bread loaf pan with nonstick spray. Pour the batter in. Top with toasted coconut chips.

  4. Bake for 45-50 minutes.

  5. Let cool 15 minutes, then cut into 10 slices. Enjoy!
