Cookie Dough Banana Bread Sandwich

R.E.S.P.E.C.T... is what we have for Belinda (a.k.a. @beachsidekitchen) for creating this plant-based, gluten-free Cookie Dough Banana Bread Sandwich! She just really gets us, you know! Try the recipe below, and you'll thank us later.


2 ripe bananas, mashed 
⅓ cup liquid coconut oil
⅓ cup cashew butter (or any nut butter)
3 tablespoons maple syrup
2 eggs (or 2 flax eggs)
1 teaspoon vanilla extract
½ teaspoon baking soda
1/2 teaspoon cinnamon 
1 cup almond flour
2 tablespoons coconut flour 
½ cup Chocolate Coated Cookie Dough Square chunks
½ teaspoon flaky sea salt, to sprinkle on top (optional)

1 extra Chocolate Coated Cookie Dough Square, cut into thirds, to make sando!


  1. Preheat oven to 350 degrees F.
  2. Mix all ingredients together in a large bowl until well combined.
  3. Pour into lined 8x8 pan.
  4. Bake for 25-35 minutes or until knife comes our clean.
  5. Let cool. Then slice into squares. 
  6. Take your other Square that's been cut into thirds and sandwich two slices of banana bread. (We recommend using two hands, enjoy!)
