Cookie Dough Sandwich


Vegan cookie dough sandwiches dipped in homemade sea salt chocolate sauce... definitely adding these to our to-dough list! Thanks Sarah (a.k.a. @_afreshpurefood) for this delicious recipe.


Ingredients:

Cookie Dough
1 cup of raw cashews (soaked for 3 hours)
2 tsp of vanilla extract 
1/4 cup of almond meal/flour
1 tbsp of unsalted almond butter
3 tbsp of raw honey 
1/4 tsp of salt
I suggest a handful of vegan dark chocolate chips
Chocolate Sauce
3 tbsp of coconut oil
1 tbsp of maple syrup
1/4 cup of raw cacao
Sea salt

Recipe:

    1. Soak the cashews in water for 3 hours or overnight. 
    2. Drain the cashews. Once fully drained, throw cashews and other cookie dough ingredients into a food processor (besides the chocolate chips). Blend until creamy. Then add the chocolate chips.
    3. Place the cookie dough in the middle of your two Squares. Place them in the freezer for 15 minutes.
    4. In the meantime, make the chocolate sauce! Combine first three sauce ingredients in a sauce pan and slowly heat and stir until well combined. 
    5. Dip the frozen cookie dough sandwich in the chocolate sauce, then sprinkle sea salt!
    6. Enjoy!
