Double Chocolate Coconut Donuts


Double Chocolate Coconut Donuts. They're really tasty, but I really, really DONUT want to share... so bake your own! ;) Plant-based, gluten-free, and full of good fats they're going to be a CHOCOLATE COATED COCONUT FAN favorite! Ingredients:

3/4 cup blanched almond flour
1/4 cup cacao powder
⅛ teaspoon baking soda
pinch of salt
2 tablespoons maple syrup
½ cup coconut milk, full fat
2 tablespoons coconut oil, melted
1 teaspoon vanilla extract
1 egg or flax egg
1 Chocolate Coated Coconut Square, chopped
1 tablespoon shredded coconut


Recipe:

  1. Preheat the oven to 350°F and spray a donut pan with oil spray.
  2. Mix together the blanched almond flour, cacao powder, baking soda and salt.
  3. Then whisk into the bowl the maple syrup, coconut milk, coconut oil, vanilla and egg or flax egg.
  4. Scoop batter into a large ziplock bag and cut the tip of the bag with scissors.  Squeeze batter into the donut pan, sprayed with coconut oil, then shake it a little to evenly disperse the batter. Sprinkle chopped Squares and shredded coconut evenly over the donuts.
  5. Bake for 15 minutes the set pan over a wire rack to cool. Wait until donuts are cooled a bit then remove from the pan.
