Fudge Brownie Skillet Cake

Just call Lina (a.k.a. @thathealthjunkie) a modern day Julia Child with her amazing Fudge Brownie Skillet Cake! Gluten-free, dairy-free, and DELICIOUSLY fudgey, it's a win-win-win situation!


1/2 cup melted coconut oil or ghee
2/3 cup coconut sugar
2 organic eggs (or flax eggs)
1/2 cup coconut yogurt
1 tsp vanilla extract
1/2 cup cocoa powder
1/2 cup fine almond flour
1/4 tsp pink salt
1/4 cup boiling water
1/2 cup roughly chopped chocolate
3 chopped Nuts and Sea Salt or Peanut Butter Squares


  1. Preheat oven to 350F and grease a medium sized skillet.

  2. Mix the melted coconut oil, coconut sugar and eggs with an electric whisk on high for 2-3 minutes. Add the coconut yogurt, vanilla extract and cocoa powder and whisk until combined, then whisk the almond flour, salt and boiling water on low speed until just combined.

  3. Fold in the chocolate and Square chunks and pour into the pan and spread evenly.

  4. Bake for 20-25 minutes.

  5. Serve hot with some coconut yogurt, cream or ice cream and some chopped toasted hazelnuts.
