Servings: ~12 popsicles (depending on the size of popsicle molds) Prep Time: 10 mins Total Time: 5 hours
Ingredients: 1 13.5-ounce can of full-fat coconut milk 1 tsp matcha green tea powder 1-2 tbsp maple syrup (or any other sweetener of choice) 5 sprigs of mint 2 Chocolate Coated Mint Squares, chopped into smaller pieces
Combine coconut milk, matcha powder, maple syrup, and the sprigs of mint in a blender. Blend until smooth and creamy.
Distribute pieces of Square evenly across each of the popsicle molds.
Pour the mixture into the popsicle molds.
Freeze for 30 minutes before inserting popsicle sticks. Continue freezing until firm (at least 4 hours). Store pops in freezer until ready to eat. Enjoy!
