PB Chunk Banana Bread

I'm in no way loafing around when I say this gluten-free Peanut Butter Chunk Banana Bread is the PBees knees! Thanks Sam (a.k.a. @healthfullysam) for this super scrumptious recipe!


2 ripe bananas
2 eggs (or flax eggs)
1/4 cup PB (any drippy kind should work)
2 tbsp maple syrup
3/4 cup gluten-free oat flour
1 tsp baking powder
1 tsp cinnamon
Chocolate Coated Peanut Butter Squares (chopped into tiny squares)


  1. Pre-heat oven to 350 degrees F.
  2. Combine wet ingredients and fold in dry (except the Squares).
  3. Bake at 350 for 30-40 minutes.
  4. Half way through the baking process, throw on 1/2 your Square chunks.
  5. Remove from oven, let the banana bread chill, then add the rest of your Square chunks as a topping.
  6. ENJOY!
