PB Coconut Protein Balls


It takes a lot of balls experimenting in the kitchen, but we're glad Shelley (a.k.a. @shapedupshelley) did! We've decided to rename her Peanut Butter Chocolate Coconut Protein Balls... AMAZE BALLS, as they're beyond scrumptious and super clean!


Ingredients:

Base
1/2 cup smooth peanut butter
1 scoop chocolate plant-based protein
1/3 cup raw almonds
1/4 cup pumpkin seeds
1/4 cup sunflower seeds
2 tbsp ground chia seeds
2 tbsp unsweetened shredded coconut
1 tbsp MCT oil
Chocolate Coated Peanut Butter Square (chopped into tiny squares)

Toppings
Hemp seeds, chocolate chia seeds, shredded coconut.


Recipe:

  1. Blend all base ingredients in a food processor.
  2. Roll into balls and placed in the freezer to harden.
  3. Then rolled in toppings: hemp seeds, shredded coconut and chocolate chia seeds.
  4. Stores best in freezer, let thaw for 3-5 minutes and ENJOY!
