Pumpkin Pie Bars


Pumpkin Pie, you've caught my eye! These Pumpkin Pie Bars are vegan, gluten-free, and giving us all the fall feels! Thanks Ali (a.k.a. @avokween) for channeling our inner #basicbetch and making us crave ALL PUMPKIN ERRTHANG!


Ingredients:

Filling
2 cups cashews, soaked 
1/2 cup coconut oil, melted 
1/4 cup maple syrup or honey
1/2 cup puréed pumpkin 
1 teaspoon pumpkin pie spice (to taste)

Crust
1 box (9 bars) Dark Chocolate Chip Crispy Bars


Recipe:

  1. Heat the bars up in the microwave for 10 seconds each (optional). Press into an 8x8 baking dish lined with aluminum foil. Freeze while you make the filling.
  2. Filling: Blend all filling ingredients in a high-speed blender until well combined. Pour into dish on top of CRISPY crust and freeze for 3 hours.
