Salted Chocolate Chunk Protein Blondies

A crowd chickPEASER, for sure! Veagn, Gluten-Free Salted Chocolate Chunk Protein Blondies super easy to make and obnoxiously (in a good way) DELICIOUS! Thanks Ashley (a.k.a. @namasteupbeet) for sharing this amazing recipe.


Ingredients:

1/2 cup cacao espresso almond butter, or just regular almond butter
1 can chickpeas (drained and rinsed)
1 cup almond flour
1 vegan egg
1/4 cup coconut sugar
a couple shakes of sea salt
1 tbsp date nectar, maple syrup, or coconut nectar
3 tbsp almond milk
1/2 tsp baking soda
1/2 tsp baking powder
Chocolate Coated Peanut Butter Square - finely chopped

Recipe:

  1. Preheat oven to 350 degrees F.
  2. Blend everything (but the Square) together in a Vitamix or high-speed blender, until smooth.
  3. Stir in chopped Squares.
  4. Spread the batter evenly into a lined or greased (with coconut oil) loaf pan.
  5. Bake for 20-25 mins or until toothpick comes out clean.
