Strawberries 'n Cream FroYo Bars


You're looking at our official summer diets!

It's that time of year again, well almost! Nothing says summer like fresh strawberries 'n cream. So when Lina (a.k.a. @thathealthjunkie) made these no-bake Strawberries 'n Cream FroYo Bars, we just HAD to share! These plant-based beauties are going to be a huge hit at your next summer BBQ. 


Ingredients:

VANILLA CASEHW CRISP Squares
2 cups cashews soaked overnight (and drained)
1/2 cup raw honey, maple syrup, or coconut nectar
3/4 cup or 1 can of coconut milk
1/3 cup coconut oil
1 tbsp vanilla extract
1 tbsp cardamom
2 tbsp maca
1/2 tsp salt
1/2 cup strawberry coconut-milk yogurt
1/2 cup fresh strawberries
1/4 cup freeze dried strawberries (optional)

Recipe:

  1. Line a 9x9 inch tin with parchment paper.
  2. Crumble up the CRISPS into the tray and press down.
  3. Blend all ingredients apart from the last 3 in a blender until silky smooth & pour 2/3 of the mix into a bowl to set aside.
  4. Add the coconut yogurt & strawberries into the blender & blend up.
  5. Pour some of the white mix into the tin & spread. Pour all of the strawberry mix on top. Then the rest of the white mix. Spread with a knife & swirl around.
  6. Top with some sliced strawberries and leave in the freezer to set overnight.
  7. Slice up and serve! When serving, leave them out at room temp for about an hour so they soften up.
